  • Rice Cooker

  • 300 g pineapple cut into small cubes
  • 1 red bell pepper diced
  • 1 cup white quinoa
  • 2 cups water
  • 10 pieces prawns deshelled and deveined
  • 1/2 red onion diced
  • 3 cloves garlic minced
  • 4 eggs beaten
  • 10 g cashew nuts
  • 1 tbsp oil
  • 2 spring onion for garnish, finely chopped


  • 1.5 tbsp soy sauce
  • 1.5 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp curry powder


  • Cook Quinoa: Add quinoa and water into a rice cooker, cook for 20 mins. Set aside to cool.
  • Scramble Eggs: Heat pan over medium heat, add 1/2 tbsp of oil. Pour beaten eggs into pan, scramble for 1 min, remove from the pan and set aside on a plate.
  • Stir-Fry Ingredients: Add 1/2 a tbsp of oil, onion and garlic for 2 mins.
    Add red bell pepper and cashew, continue stir-frying for 1 min.
    Add prawns, cook each side for 1 min.
    Add cooked quinoa, pineapple, pour sauce and mix everything together for another min.
    Mix in the eggs and turn off the heat.
  • Serve: Plate the pineapple fried quinoa and top with spring onion.
