Cook Quinoa: Add quinoa and water into a rice cooker, cook for 20 mins. Set aside to cool.
Scramble Eggs: Heat pan over medium heat, add 1/2 tbsp of oil. Pour beaten eggs into pan, scramble for 1 min, remove from the pan and set aside on a plate.
Stir-Fry Ingredients: Add 1/2 a tbsp of oil, onion and garlic for 2 mins.Add red bell pepper and cashew, continue stir-frying for 1 min. Add prawns, cook each side for 1 min. Add cooked quinoa, pineapple, pour sauce and mix everything together for another min.Mix in the eggs and turn off the heat.
Serve: Plate the pineapple fried quinoa and top with spring onion.
