Ingredients
- 300 g pineapple cut into small cubes
- 1 red bell pepper diced
- 1 cup white quinoa
- 2 cups water
- 10 pieces prawns deshelled and deveined
- 1/2 red onion diced
- 3 cloves garlic minced
- 4 eggs beaten
- 10 g cashew nuts
- 1 tbsp oil
- 2 spring onion for garnish, finely chopped
Sauce
- 1.5 tbsp soy sauce
- 1.5 tbsp fish sauce
- 1 tsp sugar
- 1 tsp curry powder
Instructions
- Cook Quinoa: Add quinoa and water into a rice cooker, cook for 20 mins. Set aside to cool.
- Scramble Eggs: Heat pan over medium heat, add 1/2 tbsp of oil. Pour beaten eggs into pan, scramble for 1 min, remove from the pan and set aside on a plate.
- Stir-Fry Ingredients: Add 1/2 a tbsp of oil, onion and garlic for 2 mins.Add red bell pepper and cashew, continue stir-frying for 1 min. Add prawns, cook each side for 1 min. Add cooked quinoa, pineapple, pour sauce and mix everything together for another min.Mix in the eggs and turn off the heat.
- Serve: Plate the pineapple fried quinoa and top with spring onion.
