Asparagus Pencil is cultivated and reaped young, particularly for their pencil-thin spears. Their stems are pale yellow-green capped with purple-green cruciferous tree-shaped tips. As compared with their more mature counterparts, they have a sweeter and more delicate grassy flavour.
